I’m not known as a good cook so when I just offered Owain a mystery snack, he was rightly a little concerned. However, I have his thumbs up so thought I’d share!
I’m addicted to chocolate mug cakes. The four spoonfuls of sugar in them is shocking though, so I’ve been looking for an alternative that is perhaps a little healthier.
So, here we go!
I beat two eggs together, mashed a banana and mixed that in too, then threw in a spoonful of honey to placate my sweet tooth. I fried it for a little while, and then served with a spoonful of greek yoghurt and a handful of blueberries. Yummy.
If you wanted to make it healthier, you could just use egg white and give the honey a miss. I’m also going to try them with a spoonful of chocolate protein powder and maybe some chia seeds and see how that goes too.
Update: I enjoyed these so much yesterday that I cooked them again this morning, but this time gave the honey a miss and threw in a scoop of chocolate protein powder instead. I also popped it under the grill for a few minutes towards the end of cooking, rather than try and flip it in the frying pan.
